🍲 Ingredients

Olives – If you know me, you know that I’m Greek and I friggin’ love me some olives. This Feta Spinach Wrap (Crunchy) is a dream for me because it not only has olives but also tzatziki and feta. But people often question whether or not olives are really good for you, and I’m here to answer that question for you.

I made this recipe with the Olive Commission of California , and I like to make sure that the olives I get are from the farms of California. Why? California olives are delicious and nutritious, adding a little something special to any meal. Their olives are naturally gluten-free and vegan. Contains vitamins E and A, PLUS iron and fiber, and lastly, monounsaturated fat, aka the good kind of fat.

Spinach – A well-known and versatile superfood, spinach is so good for you. It is loaded with nutrients essential for skin, hair, and bone health. This leafy green also provides protein, iron, vitamins, and minerals.

👩‍🍳 How to Make This Feta Spinach Wrap (Crunchy)

Here’s how to put this tasty wrap together. Oh, and did I mention that I may have made these wraps using the infamous TikTok tortilla hack? It’s fun, and also a great way to make the perfect grilled wrap.

  1. To a medium-sized pan heat olive oil for 30 seconds on low-medium heat
  2. To the pan, add the white onion and cook on low-medium heat for 4-5 minutes. You simply want the onions to become golden so do not overcook or burn
  3. To the pan, add the garlic and cook for 1 minute before adding the spinach. Let the spinach wilt down completely and cook down any excess liquid before adding in the herbs, feta, olives, and spices
  4. Cook everything down for another 5 minutes then remove it from the heat and let everything cool.
  5. Prepare your Tzatziki Sauce for dipping ( here’s a recipe for that)
  6. Place a large wrap on a flat surface and cut from the center to the edge of a wrap on one quarter
  7. Begin filling each side of the wrap with your spinach mixture then fold from the bottom left triangle, up the top left triangle. then over to the top right triangle and end at the bottom
  8. Preheat the pan with some butter and once melted cook the wrap for 2 minutes on each side on low heat. Watch this carefully as it can burn very quickly
  9. Enjoy with your Tzatziki, a fresh crumbling of feta, and more herbs!

🗒 Tips and Tricks Spinach Prep: Make sure to cook out all liquid from spinach to avoid a soggy wrap. Folding Technique: Follow the TikTok tortilla hack by cutting from center to edge and folding in sequence. Even Distribution: Spread filling evenly across quarters for balanced flavor in every bite. Crispy Exterior: Use medium-low heat and butter for the perfect golden-brown crunch. Perfect Pairing: Want something fun to try? My amazing garlic confit goes great with this wrap. 🗒 Variations Make this Feta Spinach Wrap (Crunchy) your own with these variations: Make It Vegan: Use plant-based feta and yogurt for tzatziki to create a completely vegan version. Different Greens: Kale or chard can substitute for spinach if desired. Cheese Options: Try goat cheese or ricotta for a different flavor profile. Wrap Choices: Use whole wheat, gluten-free, or spinach wraps based on dietary preferences. 🗒 Best served with

  • Greek White Bean Soup
  • Homemade Greek Salad
  • Greek Panzanella Salad

👝 How to Store Leftovers

These will last in the fridge for up to 5 days but they will be best enjoyed fresh. The Tzatziki lasts in the fridge for 10 days in a tightly sealed container.

🤔 Common Questions

You can easily use vegan feta for this Feta Spinach Wrap (Crunchy). I love Violife Foods’ Vegan Feta! However, if you’re a vegetarian, you can simply opt for whatever feta you have on hand.

You can, but it holds more moisture, so you’ll want to let it thaw and then squeeze out as much moisture as possible.

Absolutely! The spinach filling can be made up to 3 days in advance and stored in the refrigerator. This makes assembly quick when you’re ready to make your Feta Spinach Wrap (Crunchy).

The key is cooking out all the moisture from the spinach mixture. After wilting the spinach, continue cooking until any liquid has evaporated. Also, let the filling cool slightly before assembling the wrap.

It’s a folding technique where you cut from the center to the edge of the tortilla in one spot, then add different fillings to each quarter. You then fold it from one section to the next in a specific sequence, creating a layered triangle that’s easy to grill and eat.
