How do you make gingerbread loaf?
This vegan gingerbread loaf will have your whole house smelling like heaven. Plus, it won’t take too long to whip up and your whole family is going to love this. Here’s how you make it:
- Preheat oven to 350F and line a bread tin with parchment paper and lightly grease with cooking oil spray
- Into a large bowl, combine the flours, baking soda, baking powder, salt and spices
- In a medium-sized bowl add the applesauce and whisk in the melted butter, brown sugar, egg replacement, vanilla and almond milk. Whisk just till combined.
- Add the flour mixture to the wet mixture and stir with a wooden spoon to well combine
- Transfer batter to the baking tin and bake for 50-55 minutes
- While the loaf bakes, make the glaze by combining the icing sugar and water in a bowl. Stir till combined
- Cool for 5 minutes in the bread tin and remove and cool completely on the wire rack
- Serve with vegan butter or drizzle whole loaf or each piece individually with the glaze

If you aren’t into vegan baking and don’t have all the ingredients on hand to make this recipe vegan, then no problem! You can easily make this recipe vegetarian instead. All you have to do is:
- Swap out the egg replacement with a regular egg
- Use regular butter versus vegan
- Use Greek yogurt versus vegan yogurt
- Voila!
